Needing to buy new broad heads this year. Wondering what pros and cons of 3 blade versus 2 blade are?

Well you are asking the same question that most every only has an opinion on. There is a link in another post here that rates broad heads that is a pretty good review.
Bottom line is, and this is just my opinion, about four things matter, Strength, cutting area, flight and weight. You could add that confidence in your equipment is always a plus.
First strenght. You don't want it busting apart at impact or when hitting a bone. I think the solid two baldes are about as strong as they come, they also have that cut to the point tip. I always liked that but I find they they tended to plane some but I havent shot those styles in years. THere are some strong cut to the point three baldes as well and one is the snuffer which I think Magnus still produces. Very solid and proven head designed by Roger Rothair a whole bunch of years ago mainly for traditional but over the years they have modified them for aluminum and graphite. I haven't tried them yet but that G5 Magnus is looking good too.
THe three blades obviously has more surface that cuts than a two which in theory will cause more damage and bleeding.
In my opinion, most any bradhead on the market will git r done. The trick is shot placement. If you use a broadhead that flies true with your set up that is the most important thing.
With the choice you have out there, including expandables you don't have an easy task. Try waht makes sense, shootem and see how they do. You will find a combo that works for you.

I would go with the 3 blade. Reasons for this choice are 1) 33% more cut with the third blade 2) less chance for fat muscle to close the opening. If the two blade were to vut in line with the muscle tissue it could close much easier and faster causing little or no blood loss externally. just as deadly on a vital hit- just harder to track. Hit in a marginal area fat can close a two blade hole much better than a three blade hole.
