Found these 'up north' last week. There was one, twice the size of the big one, but the deer got it. Broke it in 1/4's. Is there any way to preserve them? Freezing, canning etc.?

I used to know a place where I'd always see those puff ball mushrooms but I always thought they were poison. Are they edible?

Someone once told me that they picked them in the fall and sold them to resturants. I guess there's a market for them. I wish I knew if there's a way to keep them. Canning or maybe cook and freeze??? A friend told me he dehydrates them but the last time he did it the smell made him sick Don't want to go that route!!!

I've sliced them and froze'em that way. They're a bit flimsy when they thaw, but still good flavor. Found these 'up north' last week. There was one, twice the size of the big one, but the deer got it. Broke it in 1/4's. Is there any way to preserve them? Freezing, canning etc.?

jnelson- The only way I've ever cooked them is to cut in slices, lay them in a frying pan with some butter, cover and cook on med-high heat for about 5 minutes. Covering them helps hold the moisture in so they steam.
If anyone has other recipes, please share!

Giant Puffball (Calvatia gigantea)
This mushroom is a choice edible. Trim away the cuticle (covering) if it's encrusted with dirt, and cut out any bad parts with a paring knife. Try not to wash this mushroom under water, or it will become too soggy to sauté. Slice the puffball, sauté it, steam it, or simmer it in soups, like other mushrooms. It's also great baked or grilled. It has a rich, earthy flavor with a texture of marshmallows. This mushroom doesn't dehydrate well. To store it long-range, cook it and freeze it.

You have to get these when they first pop because worms get into them really fast. At the root system cut with your knife if you see little holes the worms beat you too them. The worms are white but you will see the pin holes. If fresh throw in fryin pan with grease or butter on med. heat. Never had them deep fryed and battered , worth tryin though .
