How long is a frozen fish good for. wrapped in freezer plastic and paper in a deep freeze ?

Well now thats a good question. It all depends. Normaly I would say wrapped like that 2 years. They will have some freezer burn regardless.
I have herd of fish being in the freezer 3 and 4 years and still in good enough shape to be mounted. I would get it to a taxidermist with in a year though, because it will probably sit in the taxidermists freezer for atleast 6 months

I would think a year but not sure. As long as you took lots of good photos when it was fresh your taxidermist should be able to do right with it.

A little trick I found is the same vaccuum packer you use for food. Get rolls so you can cut bags as long as you want. Works great on capes, fish, or whatever. No air, no freezer burn! Don
